Вініфікація Для виготовлення Vardiani використовують грузинські та європейські сорти винограду вирощені в Україні. Після гребневідділення виноград охолоджується до 4-6°C, а потім пресується. Осаджене сусло починає повільно бродити в цистернах із нержавіючої сталі температури 15-18°C. Коли досягається бажаний рівень залишкового цукру, процес бродіння зупиняється.
